After dinner speaking can be a very frightening thought.
Sometimes you will know that you are expected to give a speech but sometimes you will be asked at the time meaning you will have little or no time for preparation.

Never go to any banquet or dinner, whether you expect to be called upon or not, without preparing to 'say a few words'
Most people who seem to give unprepared speeches have, infact, been practising them for a very long time.
Never rely on inspiration - it hardly ever arrives!
Find out all you can about the audience
Find out who else is speaking
Prepare a short speech and keep it simple
Keep the speech in line with the occasion and with the other speakers.
Be careful not to offend anyone
Be yourself
Practice impromptu speaking until you feel confident and make sure you know what you are talking about.
Impromtu Speaking Game
Try to talk for sixty seconds on a topic. Don't stop to think about it - just start talking. Try not to repeat anything and not to use fillers such as 'um' or 'you know'. This is brilliant practice and certainly improves your ability to speak 'off the cuff'.
